July has flown by! I’ve had my hands quite tied this month with so many fun projects and collaborations— many still to be released— but wanted to share one with you all here! This month I’ve been developing recipes for Paro. A women owned business, making packaged South Asian dishes: Daal, Kitchari, and Tarka, all full of comforting Pakistani flavors. Besides this chicken dish, I also created a tarka shrimp wrap that can be found here, and a crispy paneer with daal you may have seen on my Instagram.
Cooking a whole chicken with rice in the same pot makes for the most simple and comforting meal, especially great for entertaining. The chicken takes on the seasonings from the kitchari, and the kitchari takes on the schmaltzy drippings of the chicken. Truly a flavor packed dish, that is cozy, and super minimal in preparation! Great to pair with a fresh salad or stewed greens.
